Learn how to make The Zetter Townhouse's 'Caffe Corretto' with Taylors of Harrogate's coffee bags

Head Bartender at Boutique Hotel and Cocktail Lounge, The Zetter Townhouse in Clerkenwell, Anas El Bahhaj, has created a wonderfully light, creamy and caffeinated drink from Taylors of Harrogate's coffee bags. 

El Bahhaj says 'The drinks inspiration comes from Italian coffee style tradition. "Caffe Corretto" is widely enjoyed through the country, this beverage consists in a single/double shot of coffee with a little correction/addition of local amaro or brandy and occasionally cream.

We wanted to highlight the perfect match between coffee and cream but avoiding going for heavy/thick drink. Vanilla and cinnamon notes found in rum pairs well with coffee aroma. A light and creamy drink

Coffee here is still the star of the drink but not an overpowering ingredient.

Coffee bags are let macerate with mineral water for 24 hours, following that its strained and demerara sugar and lactic acid are added to it to balance. The last step is carbonation.'

Ingredients

30ML Pineapple Rum

10ML Amaro Montenegro

10ML Pedro Ximenez Sherry

15ML Fresh Lemon Juice

10ML Fresh Lime Juice

25ML Double Cream

20ML Sugar Syrup

25ML Egg Whites

Top with homemade Italian Coffee Soda Water

Garnish with 3 green coffee beans and straw

Method

Combine all ingredients and dry shake, Add Ice and give a quick ssecond shake.

Strain into a highball glass and slowly top up with coffee soda water.
 

Time to make

Only homemade ingredient is coffee soda which need to be infused for 24 hours. Cocktail takes around 3 minutes to make
