With recipes rooted in the estate, dishes served are inspired by the produce grown in the kitchen garden and the ingredients supplied by the local farming community, celebrating each season and encouraging guests to eat fresh, naturally grown ingredients.
Home to the award-winning Forge, led by head chef Jake Jones and the estate team, the fine dining restaurant was awarded a Michelin Star in 2025 with inspectors praising its strong grasp of balance and flavour.
This followed the previous year's Michelin Green Star for sustainability as well as Jake's Michelin Young Chef of the Year Award, reflecting the restaurant's reputation for seasonal and sustainable dining.
Local is also a focus on the hotel's drinks menu with gins from the north making up part of its spirits offer alongside Wensleydale Falconer Best Bitter.
