The Star, in the medieval village of Alfriston, is a combination of new and old buildings having been rebuilt and now boasts a 15th century frontage where behind is home to a small library, large restaurant and courtyard, which has become the heart of the hotel.
The mother and daughter duo transformed the coaching inn, retaining traditional aspects such as its ancient, beamed bar mixing with new roofs and windows.
An eclectic mixture of furniture is housed within each of the individually designed rooms, with the village of Alfriston playing a starring role in its design thanks to local businesses being heavily featured with antiques and décor from local firms.
Guests can forget the hustle and bustle of everyday life in the library where bookshelves are jam-packed with poetry, short stories and novels by British authors.
In fact, the library has a secret door that opens on to the restaurant where chefs serve unfussy, simple dishes, focused on clarity of flavour with ever-changing highly seasonal menus utilising the abundance of exceptional Sussex produce.
