The exclusive, independently-owned Welsh country hotel and restaurant, is a AA Five Red Star, Relais & Chateaux destination luxury country house hotel, with a AA three-rosette and Michelin Green Star fine dining restaurant.
Sitting on the fringes of the Snowdonia National Park, the 150-year-old house is steeped in a rich history. It was visited by the likes of Queen Victoria and Winston Churchill and was originally designed by architect Samuel Pountney Smith for railway engineer Henry Robertson between 1868-1871.
The hotel features eighteen luxurious, individually-styled bedrooms with sumptuous décor, each with a beautifully appointed bathroom. In addition, there are four garden suites situated within the estate grounds.
The award-winning hotel was given Wales’s first Michelin Green Star for its commitment to sustainable and ethical practices. It was also crowned Wales’ Best Hotel Restaurant in the 2022 World culinary Awards. More recently the AA Hospitality Awards, which recognise and celebrate quality and outstanding achievements in the UK hospitality sector, saw Palé Hall receive the 2023 AA’s Wine Award – Wales.
For foodies Palé Hall boasts a superior culinary experience with local provenance at the core. Its new head chef Sam Griffiths, brings with him an already established pedigree; Welsh chef of the year 2021, executive sous chef for all Food & Beverage at The Chester Grosvenor Hotel and he trained under the Michelin-starred chef Simon Radley.
Building relationships with local farmers, growers, fishermen and food producers is central to its ethos. Menus offer some of the finest food from the region, fresh, seasonal, and responsibly, humanely and organically produced.
Fine dining is core to the experience with families able to dine in the Venice, the Venetian themed dining room, while the tasting menu can be experienced in the fine dining restaurant The Henry Robertson. The Huntsman Bar and Bistro offers a more relaxed space for casual dining with a bistro menu.
